Creamy Broccoli Soup

The Recipe

Ingredients:

2 tbsp butter

1 medium leek, sliced

3 celery stalks, sliced

2 tbsp thyme, either fresh or dried

salt & pepper

1 large russet potato, peeled & diced

4 cups vegetable broth

2 heads broccoli, florets + the stalk, diced


Instructions:

1) Prepare your soup base: melt butter in a large pot over medium heat. Once butter is melted, add leek, celery, thyme, salt & pepper. Saute for 5-7 minutes and stirring occasionally.

2) Introduce your star ingredients: next, add in diced potato, broccoli stalk and vegetable broth. Bring to a boil then drop to a simmer. Cook for 10-15 minutes* until the potato can be pierced with a fork. Then add broccoli florets and allow to cook for an additional 4-5 minutes until tender.

3) Blend it all together: Finally, blend the ingredients to make the creamy soup. If using an immersion blender, you may blend directly in the pot otherwise blend in a standard blender and if necessary blend in batches.

4) Sample it: It may be necessary to add more salt, pepper or thyme and this is the perfect time to do so. Otherwise, serve it up and enjoy with your favorite toasted bread.

5) Serve and enjoy!
