The Recipe
Ingredients
2 ripe bananas, mashed
2 tbsp coconut oil, melted
1 tbsp lemon juice
1 tbsp maple syrup
2 eggs, room temperature
1 cup oat flour
1/2 tsp baking soda
1/2 salt
1/2 cinnamon
1/2 nutmeg
toppings: sliced bananas, walnuts
Instructions
1) In a small bowl, stir together mashed bananas, maple syrup, coconut oil and lemon juice until fully combined. Beat in eggs. 2) In a separate large mixing bowl, whisk together the dry ingredients: oat flour, baking soda, salt, cinnamon and nutmeg. Gently combine wet ingredients with dry until well incorporated but do not over mix!
3) Heat a skillet over medium-low heat. Once heated, grease the pan with oil or butter. Pour in 1/4 cup onto the pan. Cook for 3-4 minutes or until lightly golden and small bubbles begin to form. Flip and cook for an additional 2 minutes or until sides are equally golden.
4) Serve with maple syrup and top with sliced bananas and/or chopped walnuts. Enjoy!
