The Recipe
Ingredients (for 1 serving)
1 garlic clove, minced
1 cup spinach, fresh
2-3 eggs
1/2 tbsp butter
1/4 cup crumbled feta
a dash of paprika
salt & pepper
Instructions
1) Prepare the filling: In a small skillet, heat olive oil over medium-high heat. Sauté garlic for 1 minute. Add spinach and sauté for 3-5 minutes or until the spinach has completely softened. While the spinach cooks, beat the eggs in a small bowl with paprika, salt, pepper and feta. Once spinach is done, remove from pan and set aside.
2) Make the omelette: In the same small pan, melt butter over medium-high heat. Gently pour in the beaten eggs and feta mixture. Place a lid over the pan and allow to cook evenly for 1-2 minutes. Sprinkle the cooked spinach over the eggs and fold to form an omelette. Allow to cook covered for an additional 1-2 minutes until fully cooked through.
3) Serve and enjoy!
