The Recipe

Ingredients

The Dough: (Pre-made pastry dough works too!*) 1/2 cup salted butter 1.5 cups all-purpose flour, sifted a pinch of salt a pinch of sugar 1/3 cup of water, approx. The Filling: 4 shallots, sliced 1 tbsp olive oil + more for drizzling 8 oz of goat cheese 2-3 tbsp honey 3-4 colorful heirloom tomatoes, sliced 1/2 tsp salt + pepper 2 tbsp fresh thyme 1 large egg, beaten


Instructions 1) Start by forming the dough: Grate a stick of butter into a bowl, then store in freezer for 10 minutes. Meanwhile, combine flour, salt and sugar in a large mixing bowl. 2) After 10 minutes, gently whisk butter with the flour mixture until a mealy texture is created, then gradually begin to add water until dough starts to form its shape. Gather dough into a ball and transfer it to a lightly floured surface where you will flatten it to make a round form. Tightly wrap in plastic wrap and store in fridge for at least 45 minutes until dough is firm and cold. 3) Preheat oven to 375F. Prepare baking sheet by lining it with parchment paper and sprinkling on a touch of flour. 4) Begin on preparing the filling by placing the shallots into a saucepan with olive oil and caramelize on medium-low heat. Once finished, set aside. 5) Start to construct the galette: With a floured rolling pin, gently roll out dough into a 1/8" thick sheet and transfer to prepared baking sheet. Assemble. Crumble goat cheese evenly over dough, making sure to leave a 2" margin around the edges. Drizzle over a generous amount of honey, then add caramelized shallots. Next, layer tomatoes on top of the goat cheese. Finish off with a liberal amount of olive oil, then sprinkle on salt, pepper and fresh thyme. 6) Fold edges over tomatoes, then brush the crust with the beaten egg. Bake the galette for 45 minutes to an hour until the crust is golden brown and the tomatoes are ever so slightly charred. 7) Serve and enjoy! Cool for 2-3 minutes before serving.

*Adjust cooking time accordingly if using pre-made pastry dough.
