The Recipe
Ingredients:
1 cup frozen peas
1 1/2 cup fresh basil
1/2 cup fresh parsley
1/2 cup cannellini beans
2 garlic cloves
1/4 cup sunflower seeds, without the shell
3 tbsp nutritional yeast
1/4 cup olive oil
1 lemon, juiced
salt & pepper
Instructions:
1) Blanch the greens: Bring water to a boil in a medium-sized pot. Drop in peas for 60-90 seconds until thoroughly heated. Carefully remove and place in a bowl of cold water. In the same pot of water, drop in basil for 15 seconds then immediately put in same cold water bath.
2) Blend it up: In a blender or food processor, add blanched peas and basil, fresh parsley, cannellini beans, garlic, sunflower seeds, nutritional yeast, olive oil, lemon juice, salt and pepper. Pulse until fully blended and to the creamy consistency of your liking.
3) Serve and enjoy! Cook your favorite pasta per box instructions. In a medium sauce over medium heat, ladle in 1/4 cup of starchy pasta and a few (or a lot of) spoon fulls of pea pesto. Toss cooked pasta in the sauce until fully incorporated. Add more pasta water, if necessary, to assist in making a creamy consistency!
