Banana Oatmeal Cookies

The Benefits

The Recipe

Ingredients

3/4 cup butter, softened

1 cup brown sugar

1/2 cup sugar

1 egg

1 tsp vanilla extract

2 ripe bananas, mashed & equivalent to 1 cup

1 1/2 cup all purpose flour

2 tsp cinnamon

1/4 tsp ground cloves

1 tsp baking soda

2 tsp cornstarch

3 cups old fashioned oats

1/2 cup chopped walnuts, optional


Instructions

1) Preheat the oven to 350F.

2) Prepare the dough: In a large mixing bowl, combine the butter, brown sugar and white sugar. Mix together until fully incorporated together. Add in the egg, vanilla extract and bananas. Mix until well combined. Carefully sift in flour. Add cinnamon, ground cloves, baking soda and cornstarch. Mix once more until fully incorporated into the mixture. Once the base dough has been created, fold in the oats and chopped walnuts.

3) Divide dough: Use a cookie scoop or a tablespoon to evenly distribute the cookie dough among a parchment lined cookie sheet. Press the dough into thick, round disks. The cookies will only spread a little when baked.

4) Bake the cookies: Bake for 10-12 minutes or until the edges are golden brown. Remove the cookies from the oven and allow to cool before eating.
