Lemon Olive Oil Cake

The Recipe

Ingredients

1 cup olive oil

3 large eggs

1 & 1/2 cup granulated sugar

2 tsp vanilla extract

zest from 3 lemons

1/2 cup lemon juice

1 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

2 cups all-purpose flour, sub. gluten-free all purpose

1 cup milk of choice, ex. whole milk, almond milk, oat milk

powdered sugar for dusting, optional


Instructions

1) Prepare & Preheat: Prepare for baking by preheating the oven to 350F. Fully grease a 9" springform pan. For extra protection, add a round-shaped parchment sheet of paper on the bottom.

2) Create the wet mixture: In a large bowl, combine the olive oil, eggs and sugar. Mix together thoroughly before slowly incorporating the vanilla, lemon zest and lemon juice.

3) Create the dry mixture: In a separate bowl, sift together the salt, baking soda, baking powder and flour.

4) Combine all ingredients to form the cake batter: Alternating with the milk, incorporate the flour into the wet mixture in small batches. Add a little milk, mix, add a little dry, mix and so forth.

5) It's time to bake a cake: Pour the prepared cake batter into the the already prepared cake pan. Place in the preheated oven and bake for 50-55 minutes. The cake will rise and turn golden on top.

Tip: It is VERY common for the top of the cake to become slightly more browned than the rest of the cake. To prevent this, place a piece of foil over the baking cake once it gets to the golden brown color you desire.

6) Time to devour: Once fully baked, remove the cake from the oven and allow it to cool for 10 minutes before removing from pan and dusting with powdered sugar.
