Grilled Chicken & Bell Pepper Kebabs

The Recipe

2 chicken breasts, cubed

1 red bell pepper, cut into small cubes

1 yellow bell pepper, cut into small cubes

1 onion, quartered optional


3 limes, juiced

2 tbsp soy sauce

1 tbsp honey

1 inch ginger, minced

2 cloves garlic, minced

3 tbsp olive oil

salt & pepper


1) Construct the marinade: In a measuring glass, add the lime juice, soy sauce, honey, ginger, garlic, olive oil, salt and pepper.

2) Marinade the chicken: In a sealable container or ziplock baggie, marinate cubed chicken breast with half of the prepared sauce. Put in fridge for as little as an hour and up-to as much as overnight. The longer the wait the more flavor there will be.

3) Soak the wood skewers: In a shallow bowl or pan, soak the wood skewers in cold water for 20 minutes before grilling.

4) Prepare the kebabs: Alternating bell pepper and chicken (and onion, if you like), string along each ingredient making sure to leave room at the bottom of the skewer for you to pick it up.

5) Grill the kebabs: On a hot grill, arrange the kebabs evenly without any overlapping. Grill for 15-20 minutes and rotate every 5 minutes. Half way through, brush on remaining marinade.

OR alternatively, bake the kebabs: In a 375F preheated oven, place kebabs on a greased pan. Bake for 20-25 minutes. Flip at the half way mark and paint on the remaining marinade.

6) Serve and enjoy! Let kebabs cool and enjoy with your favorite side dishes.
