Spiced Pumpkin Bread

The Recipe

Ingredients

3.5 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp salt

2 tsp cinnamon

1 tsp ground nutmeg

1/2 tsp ground cloves

1/2 ground allspice

3 cups white sugar

1 cup neutral oil

4 eggs, lightly beaten

15 oz pumpkin puree

1/2 cup water

1 cup pecans, crushed


Instructions

1) Preheat oven to 350F. Prepare two 9x5" loaf pan by greasing all sides with butter or neutral oil.

2) Whisk together dry ingredients: In a medium bowl, whisk together all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves and allspice.

3) Whisk together wet ingredients: In a separate large bowl, gently mix together sugar, oil and eggs. Once fully incorporated, fold in pumpkin puree.

4) Combine the dry with the wet: Alternate adding 1/3 of the dry mixture in with the wet batter, a splash of water, mix and repeat until fully combined. Lastly, fold in crushed pecans.

5) Bake it: Evenly distribute the batter between the two prepared tins. Bake for 60-65 minutes. Make sure it is fully baked by inserting a toothpick into the center and it comes out clean.

6) Serve and enjoy!
