Peanut Butter Blossom Cookies

A plethora of peanut butter cookies with chocolate kisses on top.

The Benefits

Although there may not be a high volume of nutrition in this recipe, it does come with a different type of benefit and that is: promoting mental health and well-being. Eating cookies may help relieve stress, drop cortisol levels in the body, and trigger happiness. It doesn't always have to be about the ingredients or counting calories. Just make sure you eat them in moderation!


The Recipe

Ingredients

1 1/4 c. all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 c. unsalted butter, equivalent to 8 tablespoons, room temperature

1/2 c. brown sugar

1/4 c. granulated sugar

1 egg, large

3/4 c. creamy peanut butter

1 tsp pure vanilla extract

24 chocolate kiss candies, unwrapped


coating: 1/4 cup granulated sugar or for a more festive look, opt in for red and green sanding sugar!


Instructions

1) Combine the dry ingredients: In a medium size bowl, whisk together all-purpose flour, baking soda, and salt. Set aside.

2) Combine wet ingredients: In a large bowl, using a hand mixer or standing mixer, beat butter for 1 minute on high speed until creamy. Next, on medium-high speed, beat in brown and granulated sugar until smooth, about 2 minutes. Add the egg and beat until well combined. If necessary, scrape down the sides of the bowl with a silicone spatula. Finally, beat in peanut butter and vanilla extract.

3) Combine the two: On low mixing speed, slowly incorperate the dry ingredients into the large bowl of wet ingredients. It should create a creamy and smooth dough. Refrigerate for atleast 1 hour before baking.

4) Preheat oven to 350F and line two large baking sheets with parchment paper.

5) Roll & bake: Scoop about 1 tablespoon of dough for each cookie and roll into a ball. Roll in sugar of choice to coat the dough. Place on baking sheet. About 12 cookies should be able to fit on each baking sheet. Bake for 11-13 minutes until the tops begin to crack. Remove from oven and allow to cool on baking sheet for 5 minutes.

6) Add the kisses: Gently press 1 kiss into the top of each cookie. Transfer cookies to a seperate dish that can fit into the freezer. Do not overlap. The cookies are soft so be gentle. Allow the cookies to rest and set in the freezer for about 10 minutes. This step will prevent the kisses from melting. 7) Serve and enjoy!
