Roasted Cauliflower with Cilantro Lime Chimichurri

The Recipe

Ingredients

1 head of cauliflower

2 tsp garlic powder

1/2 tsp paprika

salt & pepper

1 c. cilantro, finely chopped

1/2 c. parsley, finely chopped

1 lg. garlic clove, minced

1 sm. shallot, finely diced

1 lime, zest + juice

2 tbsp red wine vinegar

3/4 c. olive oil


Instructions

21) Preheat oven to 400F.

2) Create the cauliflower steaks: Taking your time, slice the head of cauliflower into 1/2 inch steaks. It's okay if some florets fall out. (You can still use these!)

3) Season and bake: Lay cauliflower steaks onto a baking sheet lined with parchment paper. Paint olive oil over each piece. Evenly sprinkle garlic powder, paprika powder, salt, and pepper on top. Place in preheated oven and bake for 15 minutes.

4) It's chimichurri time: While the cauliflower bakes, in a small bowl combine cilantro, parsley, garlic, shallot, lime juice + the zest, red wine vinegar, olive oil, and salt. Set a side.

5) Tend to the steaks: Remove the cauliflower from the oven and flip. Sprinkle additional garlic powder, paprika powder, salt, and pepper on top. Place back in the oven and bake for an additional 15 to 20 minutes or until tender and slightly golden brown.

6) Serve and enjoy! Remove from the oven and serve with a nice drizzle of your homemade chimichurri sauce. Enjoy as is or with your favorite protein!
