The Recipe
Ingredients
1 bunch green beans
2 tbsp olive oil
4 garlic cloves, minced
1 lemon, zested + 1/2 juiced
salt & pepper
Instructions
1) Blanch your green beans(Optional): In a medium pot, bring 4 quarts of water to a boil. Add 1 tablespoon salt. Add green beans and allow to boil for 3-5 minutes. Remove from boiling water and place in an ice bath to prevent further cooking. This process ensures your green beans will stay tender and crisp when you blister them. Make sure you allow the green beans to fully dry before tossing them in hot oil.
2) Blister your green beans: Add olive oil to a large pre-heated skillet over medium-high heat. Gently add dried blanched green beans. Give them a quick stir to coat them in oil. Cook for 3 minutes then flip with tongs, cook for an additional 4 minutes. Add in minced garlic, lemon zest, salt and pepper. Stir and cook for a final 1-2 minutes or until garlic is fragrant.
3) Serve and enjoy! Finally, squeeze fresh lemon juice over the blistered greens beans.
