The Recipe
Ingredients
6 eggs
1/4 cup mayonnaise
1 tbsp dijon
half a lemon, juiced
1/2 tsp paprika
salt & pepper
quarter red onion, finely diced
2 stalks celery, halved lengthwise & finely sliced
3 tbsp chives, finely chopped
Instructions
1) Boil the eggs: Place eggs in a single layer on the bottom of a pot. Cover with water. Bring to a rolling boil over high heat. As soon as the water has reached a boil, turn off the heat and let eggs rest in hot water for 10-12 minutes. Drain eggs and rinse with cold water. Allow eggs to cool before peeling the shells off.
2) Prepare the yolk dressing: Remove the white of the eggs and set aside. Place all egg yolks in a bowl, add mayonnaise, dijon, lemon, paprika, salt and pepper. Mix together until creamy and well-combined.
3) Mix it all together: Finely chop the egg whites until it is to a size of your liking. In a bowl fold yolk dressing with egg whites, red onion, celery and chives.
4) Serve and enjoy! Serve egg salad with crackers or as an egg salad sandwich between two toasted pieces of bread and some lettuce for extra nutrition.
